Vegan Banana Coconut Cream Pie Smoothie

Although it is the middle of winter here in Canada, Cam and I just invested in a Vitamix and have been experimenting with smoothie recipes every day…it’s been a lot of fun.

I am obsessed with Earthy Andy’s Creme Brûlée smoothie recipe and it inspired Cam and I to think of some other dessert flavoured smoothies, and here is the winner from our experimenting: Banana Coconut Cream Pie Smoothie. We both love it and we hope you do too!


1 frozen banana

4 cubes of frozen coconut cream (freeze one can of coconut milk, including the cream on the top in your ice cube tray the night before and use the cream cubes for this recipe - you can use the milk instead of the cream if you really want to, but you will break my heart, the cream is that good)

8 dates

3/4 cup of oats

1 pinch Himalayan sea salt

1 tablespoon coconut sugar

1 can of coconut milk

1/4 cup almond milk (or your favourite type of milk)

Add everything to your blender and blend until smooth. If you're feeling fancy top it with coconut whip cream.

This is a pretty thick smoothie and our old blender was a bit wimpy, so if you find your blender, like ours, has trouble with it, add some extra almond milk or coconut milk, it will change the consistency a bit, but your blender will thank you.
